Blueberry Lemonade with Mint
Serves: 4-6 | Prep Time: 5 Minutes | Cooking Time: 0 Minutes
Ingredients
1 bag frozen blueberries (2 lbs.)
2 cups mint leaves
5 cups water
1/2 cup sugar
1/3 cup fresh lemon juice
Directions
Place all ingredients in a blender and wait 20 to 30 minutes or until blueberries are not as frozen.
Blend, place in containers, and refrigerate.
What I love about this blueberry mint lemonade?
Everyone agrees, blueberries are good for you. I love strawberry lemonade, but blueberry lemonade offers a less tangy and sweeter lemonade. I make the whole 2 pound frozen blueberries from 365 by Whole Foods and it fills up a Vitamix Blender perfectly for 7 servings.
Sugar
You can decrease the sugar or substitute the sugar for agave or turbinado sugar for a healthier option. The good news, this blueberry lemonade still packs more nutrients and has less sugar than any store-bought ones.
Mint
I have mint in our backyard. Mint grows easily and requires little maintenance. If you want to start planting your own herbs, start with mint. Make sure you plant the mint in a pot and not directly on the soil because it can take over your garden quick.
Adding mint to this recipe not only adds a zing to the drink, but provides it with more nutrients. You can add more mint when you’re ready to drink as well.
