Turmeric Cauliflower with Simple Tahini Dressing

Serves: 4 | Prep Time: 10 minutes | Cooking Time: 30 Minutes


Ingredients

  • 1 cauliflower head sliced. You will get smaller pieces and that’s OK.

  • 10-12 garlic cloves peeled or cloves from one head of garlic.

  • 1/4 cup olive oil

  • 1 tsp turmeric

  • 1/2 tsp pepper flakes

  • 2 tsp fennel seeds

  • 1 tsp salt

For the tahini dressing:

  • 1/2 cup tahini

  • 1 tsp garlic powder

  • 1 tsp onion pwoder

  • 1 tsp mustard powder

  • 1 tsp ancho chili

  • 1/2 tsp salt

  1. Heat oven at 450° degrees and line a large baking sheet with paper. Place the cauliflowers and the peeled garlic cloves on the baking sheet.

  2. Mix all the ingredients for the cauliflower sauce in a bowl. Use a brush to evenly distribute the sauce and bake for 30 minutes. You don’t have to flip, but to get a bit more crispy on one side, bake for 25 minutes without touching, flip, and bake for another 5 minutes.

  3. While waiting for the cauliflowers and garlic to bake, make the sauce by whisking all the tahini dressing ingredients.


This cauliflower turmeric goes well with mediterranean-inspired bowls. Keeping roasted vegetables is a great way to meal prep and whip together bowls to serve. If you have grains, such as quinoa, mediterranean dressing, and pickled veggies, you can easily put together a nutritious meal.

Making the Bowl for Cauliflower Turmeric

For this cauliflower turmeric quinoa bowl, I added walnuts, picked cabbage, za'atar, and tahini dressing. The walnuts add a bit of a crunch. I generally like to flavor my quinoa and the pickled cabbage gives it a punch.
