3/4 cup brown basmati rice
1 tbs chia seeds
handful chopped cilantro
2 tsp lemon juice
3 tbs pickled cabbage
1 cup spiced black bean curry
1 cup chopped lettuce
I like adding fresh fruits to recipes and yellow mango salsa adds a tangy sauce to burritos. This recipe has four ingredients: fresh yellow mangoes, red onions, cilantro, and salt. That’s it. I like to add it to black bean burritos at home. We don’t always get juicy yellow mangoes in California, so I make this mostly during spring and summer. There are ways to make mango salsa with frozen mangoes but nothing beats fresh fruits.
Making the Burrito with Mango Salsa
In the video, I made the mango salsa to serve with my his and hers black bean burrito. Aside from black beans, I added brown basmati rice with chia seeds and pickled red cabbage. Sneaking in chia seeds to rice is such a great way to add more nutrients, antioxidants, and fiber to your meals.
