Easy Tahini Salad Dressing

Serves: 6 | Prep Time: 5 minutes | Cooking Time: 5 Minutes

If fiber had a face, it would be this tahini dressing. Keeping a jar of tahini around means you can make salad dressing anytime. For this recipe, simply add lemon juice, capers, and black pepper and you’re done.

I typically use unhulled sesame seeds as see in the video. Unhulled packs more nutrients. It tastes nuttier and slightly bitter than hulled sesame seeds. I actually like the taste of unhulled better, but this recipe works for hulled as well. Choose what tastes good for you. Hulled sesame seeds are still full of nutrients.

Ingredients

  • 2 cups raw sesame seeds (I use unhulled)

  • 1 tsp garlic powder

  • 1 cup olive oil

  • 1 tsp salt

  • 2 cups water (you might need more if your blender stalls)

Salad dressing:

  • 1 1/2 cups of tahini

  • 1 1/2 tbs lemon juice

  • 1 tbs capers with brine

  • Ground black pepper

Directions

  1. Toast the sesame seeds.

  2. Transfer to a blender and add all the Tahini ingredients. I like to add 1 1/2 cups water and if the blender stalls, add the rest.

  3. Set aside 1 1/2 cups of the tahini you just made in a bowl and store the rest  for future use.

  4. Add all the salad dressing ingredients.
