Homemade Bread Using a Stand Mixer

Serving Size: 6 | Prep Time: 2.5 hours | Cooking Time: 30 minutes


Ingredients

  • 2 1/4 cups warm water (100 - 110°F)

  • 2 tbs cane sugar

  • 1 tbs dry yeast

  • 2 tbs olive oil

  • 1 1/2 tsp salt

  • 5-5 1/2 cups bread flour added 1 cup at a time. You might not need all.

Directions

  1. Make sure the yeast is active by adding warm water, sugar and yeast. Stir gently. Wait for about 3 minutes. If the yeast rises, then it’s good.

  2. Add the oil, salt, and mix. in the stand mixer with the dough hook. Slowly add the flour 1 cup at a time. See video for how the dough looks.

  3. Before I rest the dough, I clean the sides of the bowl and use my hands to form a round dough. Cover and let it rest for 10 minutes.

  4. Run the mixer for 10 seconds and cover again. Repeat this another 4x.

  5. Take 2 baking trays and line them with parchment paper.

  6. Dust your surface with a bit of flour. Transfer the dough, shape into a ball and divide into 2 parts.

  7. Create a rectangular shape and start folding. Transfer the dough seam-side down on the baking sheet.

  8. Take a sharp knife, kitchen scissors, or bread lame and make 3-4 lines. TBH, I bought a bread lame after 5 years of making bread, and I thin scissors work best for simple cuts. Do both breads.

  9. Let the dough proof for another 1-2 hours. The dough will rise and will spread. You can use a couche if you have one, but not I don’t have one and try to keep this simple.

  10. When read to bake, preheat oven to 375°F and bake for 27-30 minutes.
