Firecracker Barley Bowl
Serving Size: 8 | Prep Time: 5 minutes | Cooking Time: 20 minutes
This is a Korean inspired barley bowl. I use unhulled barley. I soak the barley for at least 8 hours and cook like brown rice.
Ingredients
- 3 cups cooked barley
- 1/8 cup olive oil
- 2 tbs soy sauce
- 3 tbs gochujang powder
- Salt
Directions
Mix olive oil, soy sauce, gochujuang powder and salt in a large bowl. When you get a fine paste, add the cooked barley.
Bake for 375°F for 20 minutes
In this video, I’m making a bowl and adding arugula, roasted cauliflower and broccoli, baked tofu with a sweet mustard sauce and topped it off with black sesame seeds.
