Sautéed Kale and Bok Choy

Serves: 6-8 | Prep Time: 10 minutes | Cooking Time: 20 Minutes


I like to mix this sautéed kale and bok choy side with rice. Makes my meals lighter. It’s a great way to add veggies to your meals.

Ingredients

  • 2 tbs olive oil

  • 1 head of garlic minced or grated

  • 2 bunches of kale

  • 2 bok choy

  • 1/2 cup water

  • 1 tbs miso paste

  • 2 tsp red pepper flakes

  • 1 tsp salt

Instructions

  1. Wash kale and bok choy. Chop bok choy. Remove kale stems, chop them, and mix with the bok choy.

  2. Chop kale leaves and place them in a separate bowl.

  3. Heat up oil and add garlic.

  4. Add kale stems and bok choy.

  5. Mix water with miso paste and add to the veggies along with the red pepper flakes.

  6. Cover and cook for about 7 minutes or until all the veggies are cooked and tender.

  7. Add the rest of the kale leaves. Cover and cook for another 3 minutes or until done.
