Asparagus and Mushroom Pasta in Tahini Cream Sauce

Serving size: 6 | Prep Time: 10 minutes | Cooking Time: 15 minutes


Ingredients

  • 1 16oz. pasta (I used fusilli in the video)

  • 1 garlic head minced

  • 1 bunch asparagus

  • 1 box 8oz. mushrooms

  • 1 tsp onion powder

  • 1 1/2 tsp mustard powder

  • 1 cup pasta water

  • 1/2 cup tahini

  • 1/4 cup nutritional yeast

  • 1 1/2 tsp salt or to taste

Directions

  1. Cook pasta. I’m using a day-old pasta in the video.

  2. Chop all the veggies. Make sure the asparagus are chopped small, 1/2 inch or less.

  3. Heat oil in a pan and add garlic then asparagus and salt. Cover and let the asparagus cook for 5 minutes.

  4. I usually test one to see if the asparagus is soft, and then I add the mushrooms, onion and mustard powder. Cover again and cook for another 5 minutes.

  5. Stir in the tahini, nutritional yeast, and pasta water. When the cream is mixed in with the veggies, add the pasta.

Notes

Using tahini is a great way to add more fiber and protein to your pasta sauce.
