Spiced Roasted Chickpeas

Serves: 6-8 | Prep Time: 20 minutes | Cooking Time: 30 Minutes


Ingredients

  • 5 cups chickpeas drained and washed  (about 3 15 oz. cans drained)

  • 1/2 red onion chopped

  • 1/4 cup tbs olive oil

  • 2 tbs soy sauce

  • 1/ tbs paprika

  • 1 tsp salt

Directions

  1. Lined a baking sheet with parchment paper and preheat oven to 424°F.

  2. Place chickpeas in a colander, wash, and drain properly. Let it sit for about 15-20 minutes.

  3. Put chickpeas in a mixing bowl and add all the ingredients. Place on the baking tray, making sure they are spread nicely and cook for 30 minutes.

Notes

These chickpeas are not meant to be crispy, but they’re tasty and great as a side. I usually mix them with rice or quinoa, add them to burritos or eat them as is. This quantity lasts for about 5 days in our home.
